Ingredients
- Beef Kebab:
- 1 lb ground beef
- 1 small onion, grated
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- ½ tsp ground cinnamon
- ½ tsp black pepper
- ½ tsp salt
- ¼ tsp chili flakes (optional)
- 2 tbsp chopped fresh parsley
- 1 tbsp olive oil
- Rice & Bowl Ingredients:
- 1 cup basmati rice
- 2 cups water
- 1 tbsp butter or olive oil
- ½ tsp salt
- 1 cup cherry tomatoes, halved
- ½ cucumber, sliced
- ¼ red onion, thinly sliced
- ¼ cup chopped fresh parsley
- ¼ cup crumbled feta cheese (optional)
- Yogurt Sauce:
- ½ cup plain Greek yogurt
- 1 tbsp lemon juice
- ½ tsp garlic powder
- ½ tsp cumin
- Salt to taste
Instructions
### Step 1: Prepare the Beef Kebab
1. In a bowl, mix ground beef, grated onion, garlic, cumin, coriander, paprika, cinnamon, black pepper, salt, chili flakes, parsley, and olive oil.
2. Divide the mixture into small portions and shape into oval kebabs.
3. Heat a skillet or grill over medium-high heat and cook kebabs for 4–5 minutes per side until browned and fully cooked.
### Step 2: Cook the Rice
1. Rinse basmati rice under cold water until the water runs clear.
2. In a pot, bring 2 cups of water to a boil, add rice, butter, and salt.
3. Cover, reduce heat, and simmer for 15 minutes until rice is tender. Fluff with a fork.
### Step 3: Make the Yogurt Sauce
1. In a small bowl, whisk together Greek yogurt, lemon juice, garlic powder, cumin, and salt. Set aside.
### Step 4: Assemble the Rice Bowl
1. Divide the cooked rice into bowls.
2. Top with beef kebabs, cherry tomatoes, cucumber slices, red onion, and parsley.
3. Drizzle with yogurt sauce and sprinkle with feta cheese (if using).
### Step 5: Serve and Enjoy
1. Serve immediately with warm pita or a side of hummus.
