Ingredients
- Chicken Marinade:
- 1 lb boneless, skinless chicken thighs, cut into chunks
- ½ cup plain yogurt
- 1 tbsp lemon juice
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp turmeric
- ½ tsp paprika
- ½ tsp garam masala
- ½ tsp salt
- 2 garlic cloves, minced
- 1-inch piece ginger, grated
- Butter Chicken Sauce:
- 2 tbsp butter
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1-inch piece ginger, grated
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp garam masala
- ½ tsp chili powder
- 1 can (15 oz) tomato puree
- ½ cup heavy cream or coconut milk
- ½ cup water or chicken broth
- 1 tsp honey or sugar
- Salt to taste
- Chopped cilantro for garnish
Instructions
1. In a bowl, mix yogurt, lemon juice, garlic, ginger, and spices. Add chicken and marinate for at least 1 hour.
2. Heat oil in a pan and cook the marinated chicken until browned. Remove and set aside.
3. Melt butter in the same pan and sauté onions until soft. Add garlic, ginger, and spices. Stir for 1 minute.
4. Pour in tomato puree, honey, and broth. Simmer for 10 minutes.
5. Stir in cream and return chicken to the pan. Simmer for another 10 minutes.
6. Garnish with fresh cilantro and serve hot with rice or naan.
