- Chicken Marinade:
- 1½ lbs boneless, skinless chicken thighs or breasts, cut into cubes
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp paprika
- ½ tsp turmeric
- ½ tsp salt
- ¼ tsp black pepper
- Sides & Garnishes:
- 1 cup hummus
- 1 cup tzatziki sauce
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- 4 pita breads, warmed
- ½ cup crumbled feta cheese
- ¼ cup chopped parsley
Instructions
1. In a bowl, mix olive oil, lemon juice, garlic, and spices. Add chicken and marinate for at least 1 hour.
2. Preheat grill to medium-high heat. Thread chicken onto skewers and grill for 4–5 minutes per side.
3. Arrange chicken skewers on a platter with hummus, tzatziki, cucumber, cherry tomatoes, red onion, and pita.
4. Garnish with feta cheese and parsley. Serve immediately.
