Chicken & Marinade:
- 2 lbs bone-in chicken thighs or drumsticks
- 1 cup plain Greek yogurt
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1-inch piece ginger, grated
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1 tsp garam masala
- ½ tsp turmeric
- ½ tsp chili powder
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp red food coloring (optional)
Instructions
- Mix yogurt, lemon juice, olive oil, garlic, ginger, and spices in a bowl.
- Coat the chicken in the marinade, cover, and refrigerate for at least 2 hours.
- Preheat grill to medium-high heat.
- Grill chicken for 5–7 minutes per side until cooked through (internal temp 165°F/75°C).
- Let rest for 5 minutes before serving.
