Ingredients

  • Salad:
    • 1 can (15 oz) chickpeas, drained and rinsed
    • 1 cup cherry tomatoes, halved
    • 1 cup cucumber, diced
    • ½ small red onion, thinly sliced
    • ¼ cup fresh parsley, chopped
    • ¼ cup crumbled feta cheese (optional)
  • Harissa Dressing:
    • 2 tbsp olive oil
    • 1 tbsp lemon juice
    • 1 tbsp harissa paste
    • 1 tsp honey or maple syrup
    • ½ tsp cumin
    • ¼ tsp salt
    • ¼ tsp black pepper

Instructions

 

  1. In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, harissa paste, honey, cumin, salt, and pepper.
  3. Pour the dressing over the salad and toss well.
  4. Sprinkle with crumbled feta cheese if using. Serve immediately or chill for later.
