Date and walnut loaf: Naturally sweet, fiber-rich bake with crunchy walnuts. Perfect for tea time, breakfast, or gifting!
Ingredients

1½ cups pitted dates
1 cup boiling water
1 tsp baking soda
1½ cups all-purpose flour
1 tsp baking powder
½ tsp cinnamon
¼ tsp salt
1 egg
¼ cup coconut oil
1 tsp vanilla extract
¾ cup walnuts
Instructions
1. Soak dates in water and baking soda.
2. Whisk dry ingredients.
3. Mix date paste with egg, oil, vanilla.
4. Combine wet and dry mixes; add walnuts.
5. Bake at 350°F for 45–50 minutes.
Notes
– Soak dates longer if too dry.
– Vegan? Use flax eggs and vegan butter.
