Description

Make Mediterranean Chickpea Wraps with seasoned chickpeas, fresh veggies, and a creamy tahini dressing. A healthy, flavorful meal for any occasion!


Ingredients

  • Chickpea Filling:
    • 1 can (15 oz) chickpeas, drained and rinsed
    • 1 tbsp olive oil
    • ½ tsp ground cumin
    • ½ tsp smoked paprika
    • ¼ tsp garlic powder
    • ¼ tsp salt
    • ¼ tsp black pepper
    • 1 tbsp lemon juice
  • Wrap Ingredients:
    • 4 large whole wheat or regular tortillas
    • ½ cup hummus
    • 1 cup cherry tomatoes, halved
    • ½ cucumber, thinly sliced
    • ¼ red onion, thinly sliced
    • ¼ cup crumbled feta cheese (optional)
    • ¼ cup chopped fresh parsley
    • ¼ cup chopped fresh mint
  • Tahini Dressing:
    • 2 tbsp tahini
    • 1 tbsp lemon juice
    • 1 tbsp water (adjust for consistency)
    • ½ tsp honey or maple syrup
    • ¼ tsp salt
    • ¼ tsp garlic powder

 


Instructions

1. Heat olive oil in a skillet and sauté chickpeas with cumin, paprika, garlic powder, salt, and pepper for 5 minutes. Drizzle with lemon juice and set aside.  

2. In a bowl, whisk together tahini, lemon juice, water, honey, salt, and garlic powder until smooth. Adjust consistency with more water if needed.  

3. Spread hummus on each tortilla, then add seasoned chickpeas, tomatoes, cucumber, red onion, feta (if using), parsley, and mint.  

4. Drizzle with tahini dressing, fold the tortilla, and roll tightly.  

5. Slice in half and serve immediately.  

Notes

– Lightly toast tortillas before assembling for extra flavor.  

– Add avocado for a creamy texture and more nutrition.  

– Keep components separate if making ahead for the freshest taste.
