Ingredients
- 12 oz pasta (penne, spaghetti, or fusilli)
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 5 oz fresh spinach
- 1 cup crumbled feta cheese
- ½ cup pasta water (reserved)
- ½ tsp red pepper flakes (optional)
- ½ tsp black pepper
- ¼ tsp salt
- Juice of ½ lemon
- ¼ cup grated Parmesan (optional)
Instructions
1. Cook pasta in salted water until al dente. Reserve ½ cup of pasta water and drain.
2. Heat olive oil in a pan over medium heat. Add garlic and sauté until fragrant.
3. Stir in spinach and cook until wilted.
4. Add drained pasta, feta cheese, red pepper flakes, black pepper, and salt.
5. Pour in reserved pasta water and toss to create a creamy sauce.
6. Squeeze fresh lemon juice and sprinkle with Parmesan, if using.
7. Serve warm and enjoy!
