    • 1 green bell pepper, diced
    • 1 red bell pepper, diced
    • 2 garlic cloves, minced
    • 3 large tomatoes, finely chopped
    • 1 tsp tomato paste
    • ½ tsp ground cumin
    • ½ tsp paprika
    • ¼ tsp red pepper flakes (optional)

    • 2 tbsp crumbled feta cheese (optional)
    • 1 tbsp chopped fresh parsley
    • 1 tbsp butter (optional for extra richness)

Instructions

1. Heat olive oil in a large skillet. Add onions and cook until soft.

2. Stir in bell peppers and garlic, cooking until softened.

3. Add tomatoes, tomato paste, cumin, paprika, and red pepper flakes. Simmer for 10 minutes.

4. Make small wells in the tomato mixture and crack the eggs into them.

5. Stir gently for scrambled eggs or leave whole for poached-style.

6. Cover and cook for 3–5 minutes. Sprinkle with feta and parsley. Serve hot.

Notes

– Use fresh, ripe tomatoes for the best flavor.

– Stir eggs gently for a creamy texture.

– Add a pinch of sugar if tomatoes taste too acidic.
